This is my go-to weeknight meal.
And it’s very inexpensive.

And the best part is that it seems to be a big hit whenever I make it.
I created the recipe about a year ago and am still trying to find the perfect harmony of ingredients. This week’s pizza was one of my best, but feel free to experiment with any other yummy toppings. This is also a great dinner to make for friends, prep a few toppings to choose from and then just pop it in the oven or on the grill.
Naan Bread Pizza (serves 2)
-2 pieces of garlic naan bread
-3 Roma tomatoes, thinly sliced
-Shredded 2% mozzarella
-1/2 tsp. minced garlic
-1/4 cup feta
-1/4 cup Basil (I used 2 tsp. of the squeezable kind this time)
-Olive oil for drizzling
-Salt and pepper to taste
Layer the naan bread with your Roma tomatoes, then combine the cheese, garlic, basil, salt and pepper in a large bowl. Add in enough olive oil just to coat the ingredients.
Spread your cheese mixture on top of the tomatoes, top with feta and bake at 350 degrees for about 10 minutes (until the cheese melts).
